Pancake day also known as Shrove Tuesday comes from the word Shrove or shrive which means to obtain for ones sins by way of Confession and doing penance and from the Christian custom to be shriven before the  start of lent.In the UK, Ireland, Australia,New Zealand and Canada its called pancake day or pancake Tuesday due to the tradition of eating pancakes on the day.

This is the history behind pancake day and I thought this day would be perfect to share my favourite pancake recipe.
  I am a pancake addict and I usually don’t need a reason to eat pancakes, if you are visiting me on a Sunday you will probably be eating pancakes with me. Here’s a recipe that’s fit for everybody, it does not contain any eggs and is very simple to make. I used cinnamon to add a lovely flavour to it but you can replace this with vanilla extract or lemon zest. This would taste great with honey or maple syrup and some fresh fruits. I love blueberries and maple syrup and I adapted this blueberry syrup recipe from Nigella’s kitchen, and I absolutely love it for its taste and beautiful colour.

Makes: 10
Ingredients:
For pancake:
1 cup Plain flour
1 cup and 3 tbsp. of  Milk
2 tbsp. of Baking powder
Half a tsp. of Baking soda
A pinch of salt.
1 tbsp. Sugar
1 tsp of cinnamon powder or a tbsp. of Vanilla extract or lemon zest
2 tbsp. Oil ( any flavorless oil)
1 tbsp. butter melted and cooled.         
For Blueberry syrup:
½ cup blue berries ( frozen or fresh)
½ cup maple syrup

Method:
In a sauce pan mix the blueberries and maple syrup, allow to boil and let the blueberries go mushy, till you get a lovely purple coloured syrup.

In a bowl, mix the flour, baking powder, baking soda salt, cinnamon, sugar and oil until everything is well incorporated.
Add the milk to make a smooth lump free batter ( if its too lumpy just use a hand blender) and leave it aside for 5 Min.

Add the melted butter to the pancake batter and stir briefly.
Heat a pan on medium heat, add a ladle full of batter. As soon as you start seeing bubbles( bubble up like a crumpet)  flip it, cook for a few seconds and transfer to a plate ( or foil to keep warm). Repeat the same with the rest of the batter.

 Notes
You will have to make sure the pan is on medium heat, if the pan is too hot you would end up  with a battery taste pancakes.  The blue berry syrup is also perfect with a slice of bread.
